I’ve been reading that hay smell my buds have now is common and after drying and curing their smell will return. A few questions.
How long does it take before the smell returns or changes from that hay smell.
Do all buds lose their small after harvest until cured
Is it washing them that removes their smell. I have been washing them after harvest but I forgot to wash 1 stem of buds and seems to of retained its smell.

All good questions:
The “hay” smell is normal and depending on the remaining nutrient load at harvest, time it was harvested and other parameters, curing could be 7 days or 2 months. I’ve had both happen. Aroma (terpenes) should develop over time with a good cure. Drying slowly helps greatly. Low humidity is detrimental to aroma but beneficial to THC production. So it’s kind of a tradeoff at times. I wash my harvest and it’s possible some of the terpenes dissipate but I don’t thing they are soluble in peroxide and water.
Some never do gain an intense smell. Phenotype could also be a culprit.

I’m a bud washer myself just make sure it don’t over dry because sometimes it’s hard to not get a hay smell of over dry
