When does veg really start?

Hello guys and gals.

So I have a question, that is as stated above…when does veg really start?? and when do I start my 6 to 8 week count towards the flip??

Figure on 2 weeks between sprout and seedling before plant is in veg.

I always start counting when she puts out her first 5 finger leaves

I usually turn up lights and start feeding about 2 weeks from sprout.
