I’m on week two of 12/12, can I defoliate? I read that it’s recommended to do so when you hit the 3 week mark(21 days).

I’d give her until week 3. She’s transitioning, still, and you really don’t want to hinder any bud formation. You can take a few leaves for airflow, but right now, she’s refocusing her energy. Cutting away at her now will put her attention towards recovery.

I hacked away at mine 
, because there were little branches that were under big leaves that werent growing as quickly as the ones that were being shined upon. Probably a mistake on my part but im planing on veging a little longer. I tied them down too!

I would wait a little bit and see if the stretch kicks in. Maybe another week or so.
