How far done you guys think this outdoor strawberry cough is ?

White hairs mean growth is still happening, so a while yet. I would wait till all the pistils ( hairs ) are dark and recessed into the flower before I check the trichomes for ripeness. So give her a couple more weeks and check again.

About another three weeks should finish it up. She will add on most of her weight the last few weeks. They will be fine outside till the first frost.

You got a bit to go personally I’ve found strawberry cough to have a longer flower time than typically expeted like 14 weeks

My guess would be 3 weeks or so left.

Now is the time, if you want early, cerebral, and lively. IMO.

I say wait till late sept or early October myself. Fall will have a spectrum shift from sun positioning accenting the far reds. Nature has made these plants fall harvesters. Most strains will harvest sept-early november outside depending on strain. Personally i would want to see the entire pistil bunches at 90% brown and receded. Early harvest is racy, short duration and can give paranoid buzz which really sux. Just my thoughts. More terpenes at end of life and higher trich production attempting to protect seeds from uv and bugs.
