if i make a few gallons of water set at 6.5 ph… can i let it sit for months without having to worry about the ph changing from sitting too long?

It does. Idle solution will absorb CO2 and create carbononic acid, which will make the pH drift lower.
You should recheck it and adjust as necessary before use.

A few days. Just pH it again immediately before you feed. There’s no reason to check it or adjust it daily. It doesn’t help anything and it’s just going to drift again.
I would check it right before I go to use it, and otherwise let it drift freely. Not much point keeping the pH perfect until it’s going into the plant.
I use a 10 gallon tub that I pump water to the plants from. The pH out of the faucet is usually around 8.2. I adjust it to 6.5 to water but usually don’t use all of it.
The next day, before watering, I check the pH and it drifts to anywhere from 7.4 to 8.0. I adjust it back to 6.5 before using it.
I have a bubbler in the reservoir along with an aquarium heater.
The short answer, as others have said, is that pH will drift and must be checked and adjusted before use.
