Any advice on how I should go about trimming such a bushy looking plant
Also should I take off the enormous fan leaves on the bottom

Remove node #2 and below. Use some soft tie wire and spread the plant out (LST)
agree…I always take off anything touching the dirt or preventing me from watering evenly.
When I trim the first time I take all the fan leaves. And I trim off some of the stems that have grown. I would honestly tie the branches down then trim any leaf covering a bud site
Start low and think creating space for airflow. Clear up center, branches covering bud sites and crossing braches and leaves. Go easy
If you have 4 or 5 leaf nodes on each stem, then take the tip off each stem so they divide. Other than that I would leave everything on it so the plant can use more light to grow. You can take off the fan leaves when it is older but when it’s young you want as many leaves as possible.
A leaf node is where the leaves come out of the stem.
I would trim anything below node three if its a photoperiod then trim anything in the center blocking new growth leave the leaves on the outside of the plant they wont be blocking anything you shouldn’t really need to remove more than 4-6 leaves from the inside of the plant for a plant this small
