This is why I grow my autos outside starting in early spring with second planting around July
You don’t run into these troubles.
I live on the east coast in mid-Atlantic region. I get 2 harvest per year.

If you ever do it, bag fermentation is the ticket, never once had one mold, fermented chunky salsa this way is awesome too.
