You can harvest one part of the plant at a time as long as you have a different place to dry. Normally, you would harvest the top first because the top colas ripen more quickly. Then give the lower part of the plant another week or two, and then harvest that.
You should hang them upside down in a dark, cool place with lots of good air flow so you don’t get moldy buds. Do this for 5 to 7 days until the branches snap, that means they’re dry enough to start the cure. First, you’ll want to fine trim the buds before you put them into curing jars. Once in jars, keep them in a dark, cool place and open them twice a day (burp) for one week, then once a day for one week. Then once a week for up to three months.

Pop the globes off the LEDs and get one of these

That way you’ll have much more light as it’s not being diffused and scattered by the globes, and it will be directed where you want it straight onto the plant so you’re not relying so much on the light reflected off the walls of your box. and you’ll have an increase in effective output of at least 10% compared to what you have now.
The only thing you have to worry about is not letting the plant touch an LED as that will give an immediate small burn on the leaf, there is absolutely no danger from the electricity to the LED as it is such a low voltage, just don’t be spraying water everywhere.
