It’s the day before Turkey day here in America and as usual my house is total chaos!
I have 9 of my 12 children home this year plus the in-laws and a new born grand baby.
Thank God for Family, Friends, and Marijuana.

Understand that we have 26 showing up, Turkey and Ribs in the smoker, ham will go in oven later Chaos to insue. Happy Turkey Day all.

I had a 31 pound turkey today. I decided to try something new with it.
I decided to spatchcock the bird this year. It took two of the large foil pans and one of my ovens. It took 3.5 hours to cook. The beast came out at 150° to rest and finish off at 170°. The dark meat remained in the oven until 165° internal and was carved carved with the white meat.
That was the best damn turkey I’ve ever cooked!!! It was perfect in every way.
Now the carcass is simmering on the stove for the next day or so. Turkey makes the best poultry bone broth.

12 kids… totally blessed my brother…
I have 3 kids, my 14 year old daughter “thinks” that she is 18 already…
and I’m still learning… never had sister’s, so my daughter’s can turn me around there fingers… luckily my dear wife is there to help…
