One thing I noticed that I don’t think was mentioned… she is in a peat pot which is is not good in the long run.
They generally hold too much moisture and the roots have trouble penetrating them when they get to the walls of that pot.
It’s ok for now as long as you make sure to not overwater, as the roots will not have had time to get to the peat pot yet …
Imo, it’s a bit small to try it just yet, but when she’s a little bit bigger, I’d get it out of that peat pot and put it in its permanent home.
You can very carefully (with sharp clean scissors) cut the peat pot off, as you would probably have a difficult time getting it out otherwise.
One question, is this an auto? Any plant might experience stress from this, and autos are finicky about how they handle stress but regardless, you do want to get her out of that peat as soon as you can do so, and as mentioned above, I think I’d wait until she gets a little bigger
Oh and btw, your plant looks fine for its stage of growth.

Day 30 and only Gelato survived the whole Epsom salt/transplant mishap. Over watered, and fed, what do you think, and what stage am I in? Keep in mind this gal should be dead,soldier. ( day 8 after Epsom salt before transplant).

Pinching the yellow leaves off wont affect her, you could leave them for her to snack on and let em shrivel up. Its your call
