I had thought of doing this too. I make fruit wines from my trees. If yer using some powerful lights CO2 would help, but probably not gonna make much difference on average setups. I also worried a little bit about possible yeast/botrytis exposure

I’m not sure that yeast would be a concern. Botrytis is always a concern around, likely the spores are in the air around us. The best way to control Botrytis is good air circulation. In this situation, I think use of an airlock should minimize the risk.

I’ve noticed that a couple drops oh ph down will do a lot. Meanwhile I can dump capfuls at a time of ph up and it hardly moves at all haha

When I adjust the well water, 1.5 gal, I use 5 ml of pH down to bring it from 8+ to 5.8. The r/o definitely threw me off.
