I was hoping for salsa making this weekend but it’s looking like maybe next weekend..
Wife just put ours in jars then sealed them in the pressure canner smells and looks good will get a pic when they are done and cooled ![]()

Not a good pic will get one with it in a bowl, wife is hungry, we waiting for Mom and stepdad to get here then we going out to eat ![]()

You can still use green/turning tomatoes for salsa if you go the cooked route.

Green tomatoes are firm and tart, so they can easily overpower the sweeter red tomatoes in salsa. To balance the flavor, smoke, grill, or roast the green tomatoes before blending to mellow their sharpness and add a bit of smokiness. Adding roasted onions, garlic, or bell peppers can bring natural sweetness without making the salsa taste sugary. If it still tastes too sour, a small amount of sugar or honey can help. Fresh cilantro and lime brighten the flavor, and a pinch of salt will help bring everything together. This way, the green tomatoes add body and tang without overwhelming the salsa.
